Day 2:
Snacks!
We know the drill. The kids run in from school ravenous as a new born babe. You scramble to pull something together quick before you rush out the door to multiple practices and other after school actives. Here's a few snack ideas you can prep ahead of time to grab 'n go. Have the kids help make them the night before for a fun way to get the whole family involved.
Fruit kababs:
Pick your favorites fruits and layer them on the a kabab stick.
Apple Slices and Nut Butter Sandwiches:
Thin slice your favorite apple. On one slice add a thin layer of your favorite nut butter, top with another apple slice. Optional toppings: raisins, banana, dark chocolate chips
Red, Green, and White Dirty Smoothies:
Add a handful of frozen strawberries and raw spinach, 2 Tbsp plain greek yogurt, and 1-2 Tbsp nut butter to your mixer.. Add about 1/2 cup of nut or coconut milk. Blend to desired consistency. (may need more or less milk to reach desired consistency).
Other great snacks that travel well:
Sliced Carrots
Nuts
Plant-based Protein Bar (my personal fav. is dairy-free-isalean-bar)
*Homemade "Kind-Bars"
*Homemade Fruit Bars
