It's a rainy Monday. You're dragging. You just want something warm and homemade. But let's be real: you've got about 15mins to prep, cook, and pack it to go. All the while dragging the kiddos out of bed begging them to put clothes on and brush teeth. What's the fix? Sunday morning breakfast on Monday! I'm talking Betty Crocker style. Yes! Yes you can. Try this quick hack and bam! You've a got gluten free, ACD approved, healthy, homemade breakfast in less time than it takes your monkeys to put their shoes on! No measuring cups needed. Ingredients
Eggs (I prefer organic lg brown) amt. appropriate to the number of people you're feeding
Gluten Free Bisquick Mix (depends on number of people you're feeding and if you want left overs approx 3-4 cups)
Ground Cinnamon (to taste, approx. 1-2 Tbsp) save some to sprinkle on top before baking
Chia Seeds (approx. 1/2 cup) save some to sprinkle on top of loaf before baking
Ground Flax Seed (approx.1 cup)
Butter ( of course we only use Kerrygold) to grease pan and optional for bread topping
Unsweetened Coconut Milk (my favorite is ****)
Optional:
Fruit (such as sliced berries)
Avocado (sliced and divided)
How To:
First and foremost warm the pot of tea or start the coffee! Then we cook!
Pre-heat the oven to 450F.
Pour bisquick mix into mixing bowl. Add all dry ingredients. Give it a stir.
Add coconut milk slowly staring occasionally. you want the consistency to be fairly moist but not runny. Mix throughly.
Pour into ungreased loaf pan and shape. (careful though the dough will be sticky).
Sprinkle the top with remaining chia seeds and cinnamon.
Bake for approx. 15mins
While the bread is baking, make the eggs.
Grease the pan (I use coconut oil or butter). Warm the pan (heat to melting point of oil or butter).
Crack eggs and cook to desired consistency
Remove from heat
While the eggs are cooking grab any optional's you'd like. Grab the plates, pour the drinks, Hot tea or coffee should be ready. Pour yourself a nice sized cup!
By this time the bread should be done. Remove from the oven, set on counter for a quick cool down. Round up the kiddos, plate the food,, slice the bread warm (it's okay). And enjoy a homemade warm breakfast that took about 15mins start to finish. This meal also packs well to toss in your bag and eat once at work.
Seriously, we'd all love to think we could spend time cooking complete delish meals that are healthy, nutritious, and meet everyones dietary requirements; but it takes time and often a lot of cash! Sometimes we need hack or two. Using Gluten Free Bisquick mix and dressing it up a bit hits all the high points with little effort or time on your part. Beats hitting the fast food joint on the way out!
